Pesto shrimp and bean salad

The pesto shrimp and bean salad, nice refreshing salad with a seafood twist.

* 1 pound frozen and cooked shrimp
* 1 cup and one ounce fresh basil pesto (make fresh pesto with this recipe)
* 1/2 cup plain yogurt
* 1 large can red kidney beans
* 1 large can black turtle beans
* 1 large can white (cannelini) beans
* 1 chopped green pepper
* 1 chopped red pepper
* 1 chopped orange pepper
* 2 cups halved cherry tomatoes


Thaw frozen shrimp package in the fridge; this requires planning ahead a little bit.
Remove tails from shrimp if necessary.
In a large bowl, mix pesto with yogurt until perfectly homogenous.
Drain beans from their respective cans liquid and rinse again.
Add beans to pesto concoction, add shrimp, cherry tomatoes and chopped peppers.
Mix everything smoothly to coat.
This meal is ready to be served immediately!
This salad keeps well, when refrigerated, for two days.
