How to make pesto

A recipe for having pesto with your seafood

This seafood with pesto recipe, allows you to make everything yourself; the pesto, the pasta, etc...
Of course you could elect to use ready-made pasta for simplicity or time constraint...

1 lb. Mussels
1 lb. Clams
1 lb. or flour or ready-made linguine pasta
1/2 cup Pesto (or more if you like)
8 Scampi
3 eggs
1 Tomato
1 Potato
1 Red Pepper
1 clove garlic
4 tablespoons olive oil Salt


Mix the flour with the eggs and a pinch of salt.
Let the dough sit for 10 minutes at least then roll it out with the pasta machine and make some pasta squares of 2 inches by 2 inches.

Peel the potatoes, cut them in cubes and boil them in boiling water.
Scrape the mussels and wash the clams, place them in a saucepan over high heat and cook them until they open. Immediately discard the ones that didn't open.
Shell the molluscs, filter the cooking water and reserve.

Peel tomatoes and cut into strips. Shell the scampi.
Heat in a saucepan four tablespoons of oil with a clove of garlic and chili that you will discard later.
Add the seafood and their filtered water, scampi, a tablespoon of chopped parsley and tomato.
Boil the pasta squares we just did in salted water, drain it with the pasta is al dente.
Pour the pasta in a large serving bowl and toss with the pesto sauce and the seafood.
