Red Pesto recipe

The red pesto recipe, a different color for a different mediterranean taste...

1/2 Cup jarred good quality sun-dried tomato
1/2 Cup Pine nuts
3 Cups Fresh Basil
1/2 Cup extra virgin Olive Oil
3 Garlic Cloves
Salt to taste
1/2 Cup grated Parmesan
1/4 tsp ground pepper


Drain and chop down the sun-dried tomatoes to small bits.
Using the food processor, process the sun dried tomatoes with the basil and garlic,
pulsing the motor until the mix is chopped coarse.
Add the Parmesan, 1/4 cup of the extra virgin oil and the pine nuts; process for 10 seconds.
With the motor running add gradually the remaining oil, the salt and pepper.
Scrape down the side of the processor bowl, to catch any not completely processed sauce,
and process the mix until it is smooth.

This will give you a nice amount of red pesto. Keep refrigerated for a few days or freeze.
