A refreshing pesto pasta salad, for those hot summer days...
Ingredients:
1 pound spiral pasta (the colored ones give this recipe a nice look, too),
1 cup fresh pesto, as per recipe provided on this site,
2 Tbsp jarred chopped green olives, or black olives,
1/4 cup pine nuts,
1 cup peas,
1 pound cherry tomatoes, halved,
Few fresh basil leaves, coarsely chopped,
2 Tbsp extra virgin olive oil,
Salt and freshly ground pepper.
Instructions:
Step 1: Follow package instructions to cook the pasta.
Remove pasta from heat and drain when pasta is al dente; meaning don't overcook
it.
Step 2: Put cooked pasta in a large bowl. Mix in fresh pesto (recipe found
here), pine nuts and green olives.
Softly mix in halved cherry tomatoes, peas, fresh basil leaves and extra virgin olive oil.
Add salt and pepper to your taste. Cool in refrigerator or serve at room temperature.
Serves 6-8.
