The pesto chicken, adding a delicious mediterranean flavor to chicken, as pesto's unique taste combines well with chicken!

Ingredients

Boneless and skinless chicken breasts or chicken thighs
Basil Pesto (freshly made with this pesto recipe, or you can buy at the supermarket)
Salt, freshly ground pepper

Instructions:

Soak and coat the chicken with pesto, sprinkle with salt and pepper.
Marinate the pesto chicken breasts in the refrigerator for 2-6 hours.
Heat up your grill or Barbecue to temperature.
Grill on the hot grill until it is cooked through.

You can slice the pesto chicken over the pasta of your choice mixed with pesto or,
another idea, with a fresh green salad.
For an easy and good salad, toss fresh spring greens,  red onion, feta cheese
and pitted greek olives with extra virgin olive oil and balsamic vinegar.
Spice the salad with dried basil, add salt and pepper to your taste.
