Gnocchi with pesto and roasted peppers recipe

The Gnocchi with pesto and roasted peppers, is something you have to try if you love pesto. To many people, the
Gnocchi is the pasta that fits the most with pesto sauce. So, here is one way of preparing it.

For two generous portions:

2 large red bell peppers
1 pound (500g ) gnocchi pasta
1 cup basil pesto sauce (see main page of this site for a good recipe; see link above)
A few tablespoons grated parmesan


Preheat the oven to 400° F (200 °C); Cut the peppers in square pieces, discard seeds and stems
Bake the bell peppers in the oven for around 25 minutes, until the skin is brown.
Cook the gnocchi by boiling them in salted water, as per package instructions (should take around 2 minutes);
then gently drain them.
In a large pasta bowl, gently mix your gnocchi with the pesto sauce
Only when fixing each plate, add the baked peppers on top of the gnocchi, do not mix

Serve immediately.
