Pesto with Chestnut Tagliatelle recipe

The Pesto with Chestnut Tagliatelle, in italian 'Tagliatelle di castagne al pesto', for an interesting and delicious meal.
In this recipe you will make your own tagliatelle pasta, as the chestnut kind simply cannot be found in supermarkets.
Don't panic! It isn't hard to do, although we are so in the habit of buying pasta packages...

200g of chestnut flour, if unavailable process fresh chesnuts to a fine powder...
100 g white flour
1 large egg
200g of Pesto
half tablespoon salt


On a wooden cutting board, mix the two flours together.
Beat the egg with 1/4 cup water and the tablespoon of salt;
Make a small valley in the center of the flour and pour in the beaten egg
Start with a fork to mix the egg and the water gradually incorporating the flour.
Work the dough with your hands until it becomes smooth and elastic.
Roll the pasta as a ball, wrap in plastic wrap and let it rest 1/2 hour.
Spread the dough and let it dry a bit. 'Roll and cut into strips.
Cook the noodles al dente,
Drain, and mix the pasta with the pesto; toss gently to coat.
Serve immediately.
